Salata horiatiki. YUM. (Taken with Instagram)
Cut up:
2 medium tomatoes (These are Ineichen’s from near IC. The yellow ones were delectable.)
1/2 medium cucumber
1/4 white onion
Sprinkle with coarse sea salt, pepper, and oregano to taste.
Top with crumbled feta cheese
Drizzle with olive oil
Take a picture for the internet because you’re sure other people give a hoot about your salad.

Feasting!
Here, friends, have some recipes:
To make a mess of delicious vegetables:
Ingredients:
-1 eggplant
-1 zucchini
-1 can tomato puree
-3 c fresh green beans
-1 pkg fresh mushrooms
-1/2 yellow onion, chopped
-Minced garlic
-Extra Virgin Olive Oil
-dill
-rosemary
-thyme
-garlic powder
-salt and pepper
Peel an eggplant and cut it into 1/2 inch slices. Cut the ends of a zucchini and do the same thing. Put them in a bowl and toss with 1 tsp of salt. Leave for 30 minutes.
Put olive oil in a pan and sauté onion and 1 tbsp minced garlic. Cover and let simmer for about 10 min. Add the tomato puree, rosemary, dill, thyme, and garlic powder to taste. Cover and simmer for 10 min. or so. Add the eggplant and zucchini and mix, cover and let simmer for another 10 minutes or so. 
Boil the green beans for about 30 min. or until tender. 
Put the zucchini, eggplant, and tomato puree in a 9x13” pan.
Sauté mushroom slices in olive oil with a little garlic, add to the pan.
Drain green beans and mix with other ingredients in the pan add some (more!) garlic and bake for 15 minutes. ENJOY!
To make excellent sangria:
-1 bottle of chardonnay
-1 1/2-2 cans of diet 7-Up
-1 bottle of Granny Smith Apple hard cider
-1 apple (chopped)
-1 orange (sliced)
-1 1/2 c. fresh raspberries
-a handful of frozen peaches
-a handful of frozen strawberries
Combine all ingredients in a pitcher, refrigerate for 3-5 days. (You can enjoy immediately, but the flavors really combine well if you let it sit for a while)
My signature salad:
-1 bag chopped romaine lettuce
-2 tomatoes, cut into chunks
-2 bunches of green onions, chopped
-1 red bell pepper, chopped
-1 cucumber, peeled and sliced
-feta cheese
-Extra Virgin Olive Oil
-Apple cider vinegar
-salt and pepper
-oregano
Combine everything in a bowl, mix. Eat.
